This is our oldest yet greatest recipe. Said to have been developed in 1937 by Modesto Caro this salsa has been served for years to our restaurant customers. A blend of fresh jalapenos and oth natural herbs and spices this is a kick with full flavor.
Drunk Cowboy (Habanero)
Not for the faint of heart. This habanero based salsa is spiced with chile pequins along with other peppers and spices. It is by far the hottest, yet still full flavored sauce , that we put out. Great on eggs, tacos, pretty much anything you want to spice up.
THE HISTORY OF OUR SALSA
THE HISTORY
In 1937 Modesta Caro was left with the task of supporting herself and her children. Modesta took to the one thing she new best, food. She took advantage of the recipes that had been passed down to her by her mother, the same which had been done for generations. She pulled the money she had together and opened the first Caros Restaurant of Rio Grande City, TX in 1937. Through the years that she operated the restaurant she carried on the family tradition and taught her children all there was to know about her recipes. All of her teaching came in handy to one of her daughters Lou Caro-Whitten in 1954 when she and her husband opened her very own Caros in Fort Worth, TX in 1954. Lous style of running the restaurant was very similar to her mothers. She spent the time and taught her children all the recipes for the food they made. Of all her children one really took it to heart.

John Whitten Jr.
Founder
Now, there is a lot to say about The Drunk Cowboy Sauce This recipe has gone through many transitions throughout the years. It is the finalization of over 25 years of development.
The truth is that it was put into motion at the request of a restaurant patron. One evening while he was dining in Johns establishment he piped up from under his cowboy hat and handle bar mustache and told John that his Green Salsa was simply not spicy enough. He wanted something hotter, and hotter he got.
John went straight to the kitchen and made him a batch of what now is called his Drunk Cowboy Sauce. When John delivered it to the table the customer scooped some up and put it in his mouth what quite possibly could have been his last meal. The events that followed brought a smile to Johns face. The sauce had stunned his customer left him absolutely speechless and brought sweat to his brow. This should be a lesson to other, be careful what you ask for.
Drunk Cowboyis a compilation of Habanero peppers and spices definitely not for amateurs or the faint of heart. This sauce could really add spice to any dish. We really only recommend this for people adept to the ways of truly Hot Salsas. Although full flavored, through its six transitions it has gotten hotter each time.
